Meal Prep For Two: Lemon Garlic Chicken, Broccoli, & Potatoes

Hello, and welcome to my blog! Today's post is dedicated to my all time favorite for flavor and ease of prep, the good ol' Lemon Garlic Chicken, Broccoli, & Potatoes.

This is a the first meal my dad taught me how to cook and it became a staple in my diet when I started cooking for myself because it's SO easy!

As a married person, I now double batch make this for myself and my husband and it's a flavorful combination that he loves just as much as I do. So if you're looking for an easy meal prep lunch or dinner, I've got just what you're looking for:

A. First and foremost, you'll need the following ingredients & items:

  1. 1lb broccoli
  2. 2lbs chicken tenderloins
  3. 8-10 yukon gold potatoes
  4. 1/2 container Lawry’s Lemon Garlic Marinade
  5. Butter (we use salted Kerrygold which used to be a great buy at Trader Joes, the price just went up πŸ™„)
  6. Oil
  7. Salt
  8. Pepper
  9. Thyme

  1. 2 sheet pans
  2. aluminum foil (we get ours from the dollar store, it's pre torn which can be hand for meal prep)
  3. a large pot

B. Get the chicken marinating

I try to make my marinade go as far as possible. For this recipe, I was able to use half a bottle for 16 tenderloins, that's the most I've ever stretched it and it still totally worked. I did this by layering marinade, chicken, marinade, so on and so forth and then swirled it all around to make sure every inch was covered.

After you've covered the chicken in marinade, place it in the fridge for minimum of 30 minutes.

C. Wash and chop the potatoes

I chopped my potatoes 3x5ish leaving us with small bite size portions.


Then, mince garlic and thyme together with salt, pepper, and about 1TBSP of oil (any oil you like). Be generous with seasoning here, I did not add enough to this batch as I was low on ingredients!


Combine in a large bowl and set aside.


D. Pre-heat the oven to about 350*F

E. Line your sheet pans with aluminum foil

I make little foil "boats" by folding the corners together to form a rim so I don't have to clean the pans later, I highly recommend this technique to anyone as tired of dishes as I am!

Add potatoes to one "foil boat" and the chicken to the other.


F. Place Chicken and Potatoes in the oven

Chicken cook time: about 30minutes or until cooked all the way through and lightly golden brown on top.

Potatoes cook time: about 45 minutes or until lightly golden brown.


G. Steam the Broccoli

Add about one inch of water to the base of your largest cooking pot. Add salt. Bring to a boil. Add broccoli. Cook about ten minutes or until desired tenderness is reached. (if you're cooking a large batch of broccoli like we did, be sure to rotate it within the pot to ensure even cooking)

Cook for about 10-15 minutes or until desired tenderness is reached. Drain excess water and add butter. Allow to cool.


H. Remove chicken and potatoes. Allow time to cool. πŸ˜πŸ‘‡πŸ»πŸ‘‡πŸ»πŸ‘‡πŸ»


Et VoilΓ ! You've got lunches for two for a week! For less than $40!!!

Time to package it all up.
